Description: The cheese is washed in brine and grows an orange yellow rind and white moulds. A Casinca smells strong and spicy. The paste is slighty elastic, springy when young becoming tender and softer as it ages. The taste is rich and mellow with goaty, fruit, nutty and herbacious flavours.
