Description: Handmade, penicillium roqueforti and vegetable rennet are added to the milk. After being salted by hand, they're left to mature for at least 12 weeks. During maturation, the blue veins occurs by piercing the cheese with stainless steel needles, allowing air to ciculate within the cheese which encourage the blue mould to go throughtout the paste. Cornish blue is a mild, sweet and creamy cheese.

Our team of Cheese Ambassadors are passionate about what they do and want to share their passion with you. We have a magnificent selection of farmhouse and artisan cheese from the UK and Europe that sit alongside cheese we mature ourselves.
All our shops have a tasting cafe where you can enjoy platters of cheese and/or charcuterie with a glass or bottle of our finest wine.
